西餐 Slow Cooker 中文叫慢炖锅,焖烧锅,煲汤锅。泛指需要长时间慢工出细活,保持食材味道的工具,可以是炖锅,砂锅,甚至是炒锅,只要火候控制好,一样可以得到Slow Cooker 的效果。关键字就是小火炖,煲。

步骤1
Generously season both sides of roast with salt and pepper. Sprinkle flour over the top until well coated, and pat it into the meat. Shake off any excess. 用盐和胡椒粉抹在牛肉的两面。 将面粉洒满牛肉的顶面,轻轻拍打直到入味。抖去多余面粉。步骤2
Heat vegetable oil in a large skillet over medium-high heat until hot. Sear the roast on both sides for 5-6 minutes each, until well browned. Remove from the skillet and set aside. 在煎锅中用中大火加热植物油。牛肉每面煎烤5-6分钟,直到变为棕色。从锅中取出备用。步骤3
Reduce the heat to medium and stir in mushrooms and butter; cook for 3-4 minutes.转成中火,搅拌蘑菇和黄油,3-4分钟。步骤4
Stir in onion; cook for 5 minutes, until onions are translucent and begin to brown. Add garlic, stir for about a minute.加入圆葱,搅拌五分钟,直到圆葱透明开始变棕色。加入蒜瓣,再搅拌1分钟。步骤5
Stir in 1 1/2 tablespoons flour; cook and stir for about 1 minute. Add tomato paste, and cook for another minute. 搅拌进1勺半的面粉大约1分钟后加入番茄膏,再搅拌一分钟。步骤6
Slowly add chicken stock, stir to combine, and return to a simmer. Remove skillet from the heat.慢慢加入鸡汤,混合,倒入炖锅中。从火上取下煎锅。步骤7
Place carrots and celery in the slow cooker. Place roast over the vegetables and pour in any accumulated juices. Add rosemary and thyme.炖锅中放入胡萝卜和芹菜。将肉块放在蔬菜上,把残留的汁液浇上。步骤8
